Monsters
Monsters are considered offshoots of gods or cursed beings that terrorize, fight, and often kill demigods and heroes. Monsters are "archetypes," born from the Chaos and Barbarism that always exist in the Western Civilization. Monsters are immortal. They can't be destroyed forever. When you 'killed' a monster, their physical form will turn into dust and their soul will reform in Tartarus and come back, someday. And that 'someday' can be days, years, or ages. Depends on how long they reform.

Gigantes
The Gigantes are the children of Gaea and Tartarus.
The Gigantes weren't born until after the gods won the first Olympian War and took the throne from Kronos. While it was originally Gaea's idea for the gods to defeat her own children, the Titans, she was unhappy with the way the gods ruled and gave birth to a new set of children, the Gigantes. Each giant was born to destroy an Olympian god

Titans
The Titans are the original immortals who ruled the universe after the Protogenoi, and before the rise of the Olympians. Kronos was their king, with Rhea as his queen.
The First Generation of Titans were born to Gaea and Ouranos near the beginning of creation. Ouranos had earlier imprisoned his elder children in Tartarus because of his respective contempt and fear of them. Gaea was outraged by the treatment of her sons and conspired with Kronos, the boldest of the Titans, to attack his father and punish him for his cruelty. Using a scythe, Kronos ambushed Ouranos and slashed him into thousands of pieces. Fresh from his victory, Kronos seized supremacy for his brothers and sisters with himself as their leader.
Kronos learned that he was destined to be overthrown by his own offspring just as he had usurped his father. To evade his fate, Kronos would devour his five elder children before a desperate Rhea saved her sixth child, Zeus by substituting a stone for his father to consume. Raised in secrecy, would grow to adulthood and free his siblings to wage war against Kronos and his subjects. After eleven years of battle, the younger immortals were victorious and Kronos was cast down to Tartarus with those who fought beneath him. As the gods are immortal when Zeus saved them they were fully grown. Zeus used the scythe to slice Kronos into thousands of pieces just as he had done to his father.
